I just found a great paleo friendly dessert recipe which has healthy fats and protein. It also has the antioxidant benefits of chocolate. It is baked Chocolate Custard found in The Primal Blueprint Cookbook by Mark Sisson.
First, preheat the oven to 325F. Then, put some water on the stove and boil a few cups worth. This water will later be used to create the water bath for the baking custard. Next, grease a 1.5 quart baking dish such as a casserole or souffle dish with either butter or coconut oil. Then, in a medium sized boil, mix the following ingredients:
- 5 large eggs
- 1.5 cans of full fat coconut milk (we use Thai Kitchen)
- 1/2 cup of maple syrup
- 1 tablespoon of vanilla extract
After mixing the ingredients above, add a chocolate paste. This will be made of 3 tablespoons of cocoa power mixed with 2 tablespoons of hot water. Add this to the mixture and stir. Next, pour mixture into the greased baking dish. Sprinkle grounded nutmeg on top. Set the dish into a baking pan. Add the boiled water to this baking pan (not to the custard mixture) until the water is half way up the side of the baking dish.
Bake the dish for approximately 35 minutes. It’s done when you can insert a knife in the center and it comes out clean.
This will make anywhere from 4 to 8 servings (depending on how generous you are;-))
The custard came out well – very tasty and rich with a definite cocoa flavor. If you’d like to dress it up, you may want to add fresh fruit like strawberries or raspberries and some heavy whip cream.
